Our decaf selection is from Colombia, which is one of the few countries that decaffeinates their coffee in country. Because of their in house process, this coffee changes hands much less that decafs from other areas. This coffee is roasted to a standard French roast to accentuate Colombia’s deep chocolate and caramel flavor notes.
About the Coffee
Located in a biological Conservation Corridor, Valle del Cauca lies between the National Park of Tatama and “serrania de los paraguas”. Some years ago, this region was identified by Conservation International as one of the two main conservation corridors in Colombia. Farmers in this region are keenly aware of the importance of the preservation of natural resources, water management and friendly environmental practices.
Our Valle del Cauca Excelso was decaffeinated in Colombia using ethyl acetate – an organic compound derived from sugar cane – to remove 97% of the caffeine from coffee beans. The process tends to leave a pleasantly sugary flavor.
With 16 coffee-producing regions along three mountain ranges and two harvests each year, Colombia is a fresh coffee powerhouse. The South American origin also has access to both the Atlantic and Pacific Oceans, which is a unique blessing for shipping logistics.
